Santa Maura is the name of the farm and is located in the region of Palo del Sombrero, Jinotega.
TELL US THE FARM HISTORY:
Santa Maura is the mother land they depend on several plot farms and Santa Maura serves as such, Santa Maura is 85 years of being in the family and started out as a farm of minimum production, currently without expanding the area of coffee, which 85 years ago was produced all season, now it occurs in one day: technological changes, labor intensity, greater availability of production credit.
FAMILY GENERATIONS:
Our generation is the third in Santa Maura work, and eventually our identification with all that means farm, has grown exponentially.
WHICH IS YOUR SECRET FOR WINNING THE COMPETITION?
Santa Maura and all the staff working on it, they are aware that our work is comprehensive, from seed to tree is born until it produces and its grain finish roasted and ground into a consumer. Each year we review all stages and if we find something that should change is made. No unilateral decisions are made, but they are agreed with the section chiefs to see how their work can influence the issue at the discussion table. Our goal is not to produce more coffee, but best coffee for each market. Therefore we use a range of different varieties.
HOW DO YOU FEEL OF BEEN ONE OF THE WINNERS?
Although much of what coffee brings to an excellent cup depends not work, but to nature itself, receiving recognition gives us an obligation and a commitment to improve ourselves every year, in what we can bring to the production.
