El Eden farm is located in Canta Gallo community in the municipality of Santa Lucia, Department of Francisco Morazán. It has an altitude of 1600 meters above sea level and is located 20 km from the Tegucigalpa city.
What is your farm’s history? Is your farm a family unit? How long has it belonged to your family? How many members make up your family?
The farm El Eden was planted by my father Luis Alberto Callejas Zelaya in 1978. He planted varieties such Villasarchis, Pacas, Caturra and Catuai. My father inherited me the farm and with my wife we have improved step by step, replanting old plots with promissory varieties like Ruiru 11. We have three children.
How many persons work in your farm, family members, permanent employees and temporary employees?
We have three permanent employees to do all the activities in the farm and for the harvest we hire almost 30 persons for picking, wet milling and drying the coffee.
What natural resources conservation practices do you follow in the farm?
We have planted life barriers to prevent the soil erosion.
What is the shade percentage and the varieties found in your farm?
In general we have 50% of shade with Guama, Roble, Gravilea and Plantain trees. The plot of Ruiru 11 has 10% shade because is young.
What type of fertilization process and rust control do you use in your farm?
Usually we fertilize twice a year with formula 12-24-12 “Formula Cafetalera” (18-6-12), because the height we don’t have many problems with coffee rust, but even that we useOpera to control it once a year.
What type of management do you use in your farm (traditional, semi-technical, technical?)
The management of the farm is semi-technical because I use chemical fertilizers in low quantities.

No, I am an individual farmer
What is the secret for winning this competition (describe the preparation process of the competing lot)?
I think the key was the variety because it is a different one. We have done emphasis with the pickers in the right point to pick the cherries. Having depulping machine very well calibrated is also very important. Fermenting the coffee properly and use a clean water to wash the coffee. During the drying process, having the correct thickness layers of coffee to get a homogeneous dried.
How does it feel to be a winner of the Cup of Excellence?
We are very happy because we achieved a goal with a lot effort of all the people have been involved to produce this coffee.
Who prepares your coffee for exportation? (Explain how you sell it and to whom)
This is the first time exporting my coffee
What is your opinion of the Cup of Excellence?
COE is a great event. It is a good opportunity to boost the Coffee farmers and link with buyers of the international market. This event show us how organized and professional is the IHCAFE team.
What has been your experience in the Cup of Excellence?
It was my third time as a participant and my first time winning.
