Alex is the Typical example of what coffee means in the Marcala coffee region. Like other children, he began to grow coffee in a farm and then he started to produce coffee by himself when he was ready to do it. He received all the knowledge by his father who grew coffee for a long time. Now he knows the basic technique to get good ripe cherries, make a proper depuling and fermentation process and the really important thing is he understood the importance to make a long and sustained dried process to get a coffee with special characteristics.
