Wilson is the third generation of coffee producers in his family. His mother, Edith Enciso was the first winner of Cup of Excellence in 2006. Today his family has managed to establish a long term relationship which keeps encouraging them to participate in this events. Wilson applies different kind of fermentation according to the type of lot also implementing different fermentation times according to the variety and altitude.
To him it is important to know the quality of his coffee in a more specific way in order to adapt a processing method based on the established parameters for each lot. His parents are a great example of high quality coffee growers in their region and Wilson is following their steps.
