Arturo Paz is a prestigious cupper in Honduras , and is also member of the Paz Family, who are specialty coffee exporters. We had an small interview with him, and that’s what he said:
Arturo Says:
“I am part of the third generation of coffee growers in my family. My grandfather Cantalicio Paz, was one of the first coffee farmers in the zone of The Yojoa’s Lake, and my father and uncles have continued
harvesting coffee in San Vicente de la Nieve – Ilama/ Santa Bárbara. Five years ago I decided to buy my own farm, because I Love Coffee and I want to continue my family tradition.”
What can you tell us about the process?
To improve quality, pickers are very meticulous in just cut the ripe cherry. Wet milling is implemented "on time", and the beans are dried in patios and then those are stored in "Grain-Pro" bags to a 10.5% of
humidity.
We cup the coffee separately, in that way we know how to prepare the lots.
Why is this lot special?
Simply, “Its Flavor”, the one the nature provide to the Santa Bárbara's Coffee; our work is just to do a proper process in order to keep its flavor.
