History of the Farm:
Sítio Santa Terezinha is locarted in the municipality of Carmo de Minas, in the micro-region and terroir denominated Mantiqueira de Minas – Indication of Source (IP) – where the coffees are recognized for their complexity and sensorial profile. Sítio Santa Terezinha is part of the familial group known as “Sítio da Torre” from Carmo de Minas.
The continuous search for improvement of the coffees is a priority of the farm, as the choice to produce specialty coffees requires much more dedication and work from the producer, but we are certain that we are on the right path. The harvesting process is by-hand, only picking ripe beans (known as cherries), soon
afterwards they are washed and spread in fine layers on the patio and raked several times per day, until they reach the ideal humidity for resting in rest boxes. The coffee is only taken to a mechanical dryer in the case of rain. Preservation of the environment is the main goal of the farm, as we are certain that this integration of man with our nature makes us increasingly better.
