Amor de Dios IV History David Chambis farm covers ten hectares of land at an elevation of 1671 meters above sea level. Three hectares are planted with catuai and caturra coffee. David is a member of the association AIPEAD, a producers association located in the community of Amor de Dios in Caranavi. We are a small association, he explained, but we have been improving quality and now we are producing excellent coffee. David also has a small bee keeping operation and produces honey. Quality Practices Ripe cherries are hand harvested from June to November. Depulping is done daily immediately after harvest. Wet milling is done centrally at AIPEADs plant. Depulped coffee is fermented for 15 hours and washed with clean water from mountain streams. The coffee is then sun-dried on drying tables.
