History of the farm
Fazenda Volta da Serra was acquired around 1993 by the producer’s father, Lindolfo Martins de Assunção, who sought to benefit his children by designating to each of them an area of the farm that they might continue familial agriculture in his footsteps.
Coffee processing system
Only ripe coffee cherries were picked and taken directly to the pulper. After being pulped, they were spread on an on-air patio for the water to drain. Then they were taken the greenhouse where the drying process continued. After this, the beans are processed and stored in a warehouse.
Concern about quality
To ensure the quality of the coffee, the patios are cleaned first and the beans are carefully spread to avoid fermentation and promote uniform drying. In the warehouse, the bags are placed on a swept floor and covered with a plastic tarp to avoid possible contact with humidity or other factors that might alter the coffee’s properties.
