Finca San Jose is located in the Santa Ana Volcano, in el canton Los Naranjos, Juayua, Sonsonate.
It has a total area of 70 hectares, 56 hectares of coffee plantation and 14 hectares of Natural Rain Forrest. It has an altitude from 1400 m.a.s.l ( 4593 feet) to 1650 m.a.s.l ( 5413 feet).
Finca San Jose was stablished in the late 1890´s by the Ruffatti family. In the year 2005 was almost destroyed by the Santa Ana volcano ash eruption. In 2013 it became part of Café Tuxpal Estate farms and since then it has been in a intensive coffee plants renovation, selecting a diverse group of varietals in order to produce a big palestra of coffee profiles.
Varietals: the farm is divided in 10 diferent micro-lots, each micro-lot is differentiated by a coffee varietal, the most comon are Pacas, Red Bourbon, Pacamara, Yellow Icatu, Anacafe 14, Villalobos, SL 28 and Geisha.
Our Pacamara lot was planted in 2015. This shade grown Lot # 7 is cultivated at 1575 m.a.s.l, The Inga tress keep the microclimate at 16 Celcius, keeping the soil at a disired humidity for a longer period causing a very slow ripening.
During the harvest, only the perfect ripe cherries were carfully picked, the coffee was inmediately delivered to the Beneficio Tuxpal were a seconf sorting took place. The coffee was depulped, it had a fermentation period of 36 hours. The drying process last 18 days over raised beds with a strictly supervision.
