Overview
Gillio Francesa, on his 80s still develops good understanding on what artisanal production is. He micro mills, his Finca Guadalupe on the back of his truck, in a small Penagos 500 machine, which he calls El Espino Micro Mill. He processes on site, leaving pulp and mucilage straight on the farm and transports the parchment to his home where he carefully sundries his beans. This is called Yellow Honey process.
Guadalupe has 4 hectares of land set at an altitude of 1750-1800 meters above sea level and is located at Zarcero, part of the West Valley coffee Region.
