History of the farm
Sítio Serra was acquired by the producer, Sandra Lelis da Silva, who runs the farm together with her husband and son. The property is split by clear water streams and is protected by riparian forests in the magnificente Serra do Brigadeiro State Park. The temperature in the region varies from 18 to 22°C and the coffee fields are wooded with Australian cedar trees. The owner is very concerned by environmental and social matters and it is important to stress that this farm has won awards in regional and national competitions for the high quality of its coffee.
Coffee processing system
The harvest is done manually, seeking to create jobs. After being picked, the coffee is washed and passes through the huller. The water used in this phase is completely recycled. Next, the beans are taken for drying on concrete patios or African beds. Later they are separated according to quality. After drying the lots are kept separated in rest boxes and are stored on the farm itself.
Concern about quality
The owner has invested much in the search for information, seeking to maintain the high quality of the coffee she produces. It is essential that all who participate in the production, from pre- to post-harvest receive special training, thus ensuring standards of quality and productivity of the coffee. The producer’s vision is to take great care with environmental and social matters for the benefit of all involved.
