Overview
Tizapa farm is located in the western part of El Salvador , in the municipality of Apaneca, Ahuachapan, one of the best coffee growing regions in El Salvador . Finca Tizapa occupies a good part of Cerro de Oro (Hill of Gold), one of the hills that surround the village of Apaneca, the highest (by elevation) town in El Salvador , blessed by year-round cool temperatures and lush vegetation. Finca Tizapas altitude ranges from about 1,200 to more than 1,500 meters above sea level, at the summit of the Cerro de Oro. Finca Tizapa maintains a private forestry preserve, home to endangered species such as mountain cats, deer and a large variety of birds. We grow our coffee in the shade of indigenous mountain trees, with a relatively small amount of chemical fertilizers and very little pesticides. To conserve sometimes scarce water, we have built small reservoirs strategically located throughout the property.
History of Finca Tizapa: Tizapa was originally part of Las Victorias, one of the pioneer coffee farms in the Apaneca region of El Salvador . Dona Haydee, the present owner, is the third generation in her family to own the property and has put a great deal of effort into maintaining the high quality that has characterized this farm for so many years. Currently, Tizapa has mostly Bourbón trees with small areas of Pacamara.
What is your secret for winning the competition?
1. We start with high quality Bourbón and Pacamara coffee trees and add to the mix our great location and rich soil.
2. We use the good agricultural practices that generations of experience have taught us.
33. We process all our coffee exclusively at Beneficio Los Amates, which has processed Cup of Excellence winning coffees for five years in a row.
How do you feel to be a winner?
Everybody at Finca Tizapa is very happy that the farm won a spot on this years Cup of Excellence. Winning an award such as the Cup of Excellence motivates us to continue producing one of the best coffees in El Salvador and is a source of pride to each and every one of the workers that make up Tizapas extended family. We feel honored that discerning coffee consumers throughout the world will be able to bring a part of Tizapa to their homes and tables when they drink our coffee.
What do you think of the Cup of Excellence?
Like most producers in El Salvador , we feel that Cup of Excellence is an excellent program that is helping recapture the great reputation that El Salvador once enjoyed before being squandered by bad governmental policies in the 1980s. We also appreciate that the program is helping to educate a new breed of consumer to the wonderful quality of coffee produced by our beloved country.
