Overview
Coffee from Fraijanes Volcano Region is characterized by its excellent taste and aroma, Typical of high altitude coffees. Cafe from Finca Santa Barbara in Ravanales, one of the finest of this region, is the result of over 100 years of hard work and total dedication to produce and process the highest quality. In 1894 Don Gregorio Zamora committed himself to produce a high quality coffee, establishing and following four golden rules: 1- Always use the best quality seeds, suitable for high altitudes; 2- Devote all efforts to the plantation and provide tender care to coffee trees, every day from sunrise to sundown and caring all the natural resources of the region; 3- Process coffee cherries in the farms wet mill, taking care natural fermentation process, washing carefully the beans and sun drying coffee in the patios. 4- Every morning thank God for a new day and at the end thank him for being able to accomplish a hard work day and infinite care of coffee trees. These rules became a tradition that has been closely followed by four generations. Golden rules, combined with pride and dedication of the family, lead to produce a high quality coffee. As far as quality is concerned, we take care during all process from handpicking, processing, drying and preparing every coffee sample. We are really concern about environment and social issues, so we promote a sustainable coffee production. Regarding quality, we made different research projects in coordination with Anacafe to improve productivity and quality in coffee production. To process our coffee in Santa Barbara we have an ecological wet mill, a dry mill, patios to dry coffee and equipment to roast coffee for domestic consumption. Besides coffee production, we have coffee tours and produce other agricultural products, also. As result of our experience to produce high quality coffee, Anacafe certified us to sell seeds of caturra and catuai varieties, to local coffee producers.
