San Gabriel is property of Alexander and Magali Delgado, brother and sister. It is manage by Alexander but both their families are involved in all the activities of the milling and production of the coffee.
Is located at 1550 meters above sea level and only ripe cherries are process, assuring a great quality cup. We use ecological friendly milling and drying processes, reducing the impact on the environment.
We used a very innovative process on this coffee called slow drying, this process allows the coffee to obtain a very high development of the sugars getting as a result a very high quality cup and assuring its quality after longer periods of storage. This guarantees the buyers and roasters a coffee that won`t loose its properties as easily as others. It is a semi washed process and the drying is done on African beds, set under shadow and on the last day of the drying process the coffee is put directly under the sun. With this process we can easily eliminate any defect coffee beans and other materials obtaining a better quality. This process not only improves the quality of the cup, it also achieves a product that maintains this better qualities during the milling and during the roasting.
