BACKGROUND
The type of coffee crop is under shade, established in more than 5 hectares in the lower montane forests, conserving biodiversity and maintaining the potential for atmospheric carbon capture, reducing the impacts of carbon dioxide. (CO2)
The economic and social importance is described because the Mendoza Sanchez family depends economically on coffee, constituting it in 90% of the family economic base; conserving the culture that by generation has been transmitted, whose knowledge is reflected in the production of specialty coffee satisfying the most demanding palates of a market segment at local, state and national level.
TECHNOLOGICAL INNOVATIONS
Good Agricultural Practices and Wet and Dry Milling
From the identification of the mother plants, through obtaining of seeds and place them in nurseries, until the establishment and maintenance of the plantations, we work with agricultural practices friendly with sustainability principles. The principal activities include manual control of weeds during 2 occasions per year; shade regulation conserving with more than 20 species of trees in the production unit, also trees help us regulating the temperature in the coffee plantation, maintaining greater humidity and providing a high percentage of organic fertilizer as the basis of source of food to coffee plants.
The different pruning are carried out according to the productive structure of the plant, having with it new and vigorous vegetative material in plants with no more than 10 years of productive status.
In the soil and water conservation, individual terraces are constructed, with the establishment of natural live and death barriers, and the construction containment dams to stop or prevent the formation of cavities and to prevent erosion.
In the activity of the harvest and post-harvest; the Selective cutting consists in obtaining cherries at their optimum point of maturity, which are immediately taken to ecological beds; obtaining natural coffee; in the whole process the coffee bean ends with a drying that goes from 11 to 12% humidity; in all stages, the quality and safety of the product is taken care.

The altitude of the coffee area is located between altitudes ranging from 1350 to 1500 meters above sea level, this being a determining factor in providing greater quality to the product.
RECOGNITION OBTAINED
During Cup of Excellence México 2018, the coffee from Farm El Mirador was evaluated above the 89 points placed among the top ten in the Cup of Excellence Competition.
