The Ocoteno farm, a Nahuatl voice that means "place of pines" has a small area of 0.5 hectares, planted mainly with the Marsellesa coffee variety and maintains 5% of the caturra variety. In most of the surface there is a natural shade, which is composed of trees of the genus Inga, (nitrogen fixing legumes), and fruit trees such as orange and banana. The rainy season begins in June and ends in March. The harvest season is from December and ends in May. The land where the farm is located was received in inheritance in 2015 and the original plan was to build a house; however, since we did not have financial resources at that time, it was decided to plant coffee so that the land had some use. At the beginning, it was not considered to produce specialty coffee since our family had little knowledge of the subject, so it was decided to introduce a new variety in the region: Marsellesa, of which its resistance to rust was known, the main desirable characteristic before such a natural enemy. The variety adapted very well in the area, we were surprised by its high production and its good cup quality which stood out for its bright acidity. Last year acupper friend tasted our coffee and told us that we had the potential to produce specialty coffees, and even more so if we improved the harvest and transformation process. Since then we set to work and we set the family goal to participate in the cup of excellence for the year 2019, in the next harvest we improve the harvest by cutting only ripe cherry, we process the same day of cutting and dry the parchment coffee under shade in African beds. Result: A good international coffee washed winner in the Mexico 2019 cup of excellence contest, located in 11th place with a rating of 88.36 points. My wife, parents, as well as my uncles who supported the coffee process, are very happy to see the effort, dedication and love that we put into this project materialized, but above all for having met institutions and consumers who value the quality of our coffee, this has motivated us to replicate and improve the work model in other farms to continue in the specialty coffee sector.
