My farm was a heritage from my dad, since 40 year ago he had the farm. I have been working in my farm for 6 years in speciality coffee. The rainy season in my farm is from July to September. The harvest season, the pic is December and January. The lot of CUP of excellence was from the second and third pick. During the harvest, the family and I do the picking, we are 6 members so we can take good care in selection. The coffee plantation has shade from trees such as vainillo (Inga vera), naranjo (crateva tapia), banana, lime, and the fruits we obtain from the trees are for self consumption. We do the cut of weed by machete in the time it is programed. I was Cup of Excellence winner in 2017 in the twelve position, and this really motivated me and my family to continue to have the best possible quality. Talking about the process, the selected cherries have a red winy color, we washed them, fermented for 95 hrs, depending of the weather, slow drying under shade in sun yard. We do whased process. The varieties we have in the farm are Typica, Caturra y Maragogipe. We are very motivated with Cup of Excellence, thank you to everyone that make this possible for us.
