The production of coffee from the farm El Encanto is based on the principle of sustainability, caring for and conserving biotic factors in the coffee ecosystem; taking advantage of different natural resources such as air, soil and water to obtain special coffee.
In addition to the creation of a direct job and 350 indirect wages in the harvest and wet coffee milling, the income generated by the sale of coffee constitutes the family economic basis up to 90%.
The activity on the farm is carried out all year according to the phenology of the crop, being the producer itself the one in charge of the work, supported by local and foreign day laborers coming from the Central and Mountain Region of our State.
The teaching that transmits the coffee activity, causes the incorporation of new individuals in the distinct stages of development and production of the crop; with this, the generational relay is working in the Camargo Sánchez family.
INNOVATIONS: Good Agricultural Practices and Wet and Dry Benefits.
At Finca El Encanto, the Arabica species are cultivated, whose dominant variety is Typica, with a population density of 1,800 to 2,000 plants per hectare, established in a traditional poly farming consisting of coffee, plantain and sweet lemon trees, cajeles (like oranges) and grapefruit that were introduced and that constitute the mosaic of vegetables where native trees of the region are maintained with heights ranging from 15 to 30 meters; considering a 100% shade crop, with loamy clay soils and favorable climate for the production of specialty coffee.
The continuity of the crop is based on the preservation of the varieties that offer a special cup profile; therefore, the activities begin with the collection of seeds of mother plants; establishing nurseries and in polyethylene bags until sowing and maintenance of the plantation; all the activities carried out are based on the principles of sustainability.
Weed control is carried out manually once a year and shade regulation is carried out according to the needs of light, pruning the trees when there is too much or sowing when the existing shade is insufficient.
The different types of pruning are applied according to the productive structure of the plant, causing new vegetative material with high productive potential and quality. In the 6.05 hectares of coffee cultivated are plants that do not exceed 20 years of age, obtaining in the present production cycle an average production of 1870 kilograms of specialty natural coffee qualified above the 86 points according to the protocol of the Cup of Excellence Mexico.
In the harvest stage; mature cherries are obtained that are immediately taken to the drying patio, obtaining natural coffee with 11 to 12% humidity. The artisanal work carried out at Finca El Encanto guarantees a unique quality coffee in the specialty market.
