Pinares 2 farm is located in the Volcano of San Salvador between 1400 and 1525 msnm. The farm, which is of father and son, is run by Hector M. Velasquez Guzman and it is made up of 7 hectares, 4.55 ha is Pinares and 2.45 ha is Pinares 2. The winning lot for this COE competition comes from Pinares 2, which is nestled at an average 1450 msnm. The coffee is shade grown, washed Bourbón. Most of the shade trees are indigenous to the area and new trees are being planted every year to improve the ecosystem of the area. The Lots that entered the COE were the result of a selection of the best lots of the farm. Due to the fact that all were micro lots, from 0.5 to 10 (46 kg bags), a lot of attention was placed in the quality, starting from the picking of the cherries, the processing, drying and storage of the parchment beans. Since the whole process was controlled by Hector, for guarantee that the cherries were processed as soon as they reached the mill. The mill is a small ecological mill, with a desmugilinizador and a siphon; this mill consume about a tenth of the water that industrial mills consume plus, just by having the mill at the farm instead of sending the coffee 125 km away we saved about 3 tones of CO2. The drying of the coffee is done in African tables and in a elevated clay tile patio, this prevents the coffee from being in contact with animals, contaminated by contact with soil plus it provides a better aeration to the beans preventing fermentation. Even though we have only been in the business for four years I can assure you that, what we lack in tradition we make up with passion, and our coffee is the result of that.
