Overview
The name El Cashal comes from a variety of trees that grows in the farm. It is located in Ahuachapan in the western part of El Salvador . Serving as a cradle to both lagoons, Las Ninfas and Laguna Verde, nested between both bodies you find El Cashal. Her owner, 4th generation coffee grower Maria Alicia Castillo, told us the story about the farm back when it was only scarcely planted in the 1940s and how her father-in-law, Jose Ruben Magana together with the farm manager transformed the bramble patch into a beautiful coffee garden. Nowadays her husband Jose Magana Romero is in charge and the whole family want to dedicate winning COE this year to their beloved Papa Pin. To participate in the competition, they tried to pick only nicely ripe cherries selecting those of the Bourbón variety. This farm won in 2006, 21st place, and they have been looking for a long term relationship with a buyer that would be willing to work hand by hand to promote high quality coffees. The Maganas have been reducing their chemical inputs and have increase the use of organic fertilizers such as chicken and cattle manure, coffee pulp for organic composting. Traditional appreciative pruning is performed at El Cashal. They already certified their farms with Rainforest Alliance and they are very excited about the opportunity given by the CoE event that has allowed them to enter the specialty market and get a higher price for their fine coffees since they won in 2006, this has been possible with the support of their cooperative.
