Overview:
More than a century and a quarter ago Don Manuel Ariz left Galicia, Spain and arrived in Concepcion de Ataco, Ahuachapan to a truly magical area that was known by the locals as the site of ¨elevated springs¨. In that time period Coffee planting was bigining to take hold so Senor Ariz smartly proceeded to invest in small plots of land nearby, beginning with 13.5 flat, clay-lime soil hectares of what today is VILLAGALICIA farm, hence the name. Senora Rhina Lagos Ariz the beautiful granddaughter and owner of the farm into the new century married in 1929 a coffee pioneer and UC Berkley educated gentleman from Ahuachapan, Don Raul Salaverria Duran. The couple quickly made it one of the most productive properties in Western El Salvador and one which continues to produce and exquisite balanced cup of Kaffee well after her passing in 1992. Today Dona Rhina´s grandson Mauricio continues the family tradition of specialty coffees which includes investing in a Micro Mill (El Divisadero) that sits on the north- west portion of the VillaGalicia . The coffee is treated separately by tablones . la Joya ,carrizal and Pretoria are always standouts lots . Also, the canopy that shades the farm is kept at 75% and the coffee pulp with mucilage nutrients (from the milling) is all distributed every year on all areas. The farm has kept its Bourbón varietal, perfect altitude , no wind factor and general terroir, coupled with the parihuelas drying method of taking delicate care of our product as it dries ; It´s close access to town for our workers help seal the advantages the farm has in quality well into our modern times .
