Farm:
San Jose - Ocotal, Nueva Segovia The farm San Jose Pirineos was acquired 40 years ago due to poor conditions in which I acquired it, I have been able to to restructure it, this has been an ongoing work. To fertilize I mix different organic applications which includes pulp, cow manure and banana plants this is done in the months of May and June. Natural shade is provided by guava negra y blanca bucara, sapote, citric plants and jocotes. Harvest begins in December and ends in March this is done manually, the workers carry it on their backs to a close by mill. Fermentation lasts between 12 and 18 hours depending on the climates temperature. Its dried in a cement courtyard and transported of to the wet mill which takes approximately half an hour.
