Traceability of the Farm Los Cimientos
The importance of coffee cultivation lies in the conservation of 50 hectares of mesophilic forest in an area owned by our Mendoza Sánchez family. The coffee activity generates income for the producer, the family and helps the creation of 200 indirect wages during the harvest and benefit of coffee, contracting labor from the Mountain region of our State. In the coffee production is characterized by an artisan productive culture that has been transmitted by generations, from parents to children, whose knowledge is reflected in the production of quality coffee, with very aromatic notes and pronounced taste of chocolates and caramels.
INNOVATIONS: Good Agricultural Practices and Wet and Dry Milling
In the farm Los Cimientos, the cultivated coffee species is Arabiga. The varieties are the typica and bourbon. The shade of the crop is generated by more than 20 species of native trees of the region, with clay-loam soils suitable for cultivation.
The coffee activity begins with the identification of the seed donating plants, obtaining it and the installation of nurseries, and the establishment and maintenance of the farm; all tasks performed are based on sustainability principles.
Weed control is done manually and is carried out twice per year; the shade is according to the needs of lightness, conserving more than 20 species of trees that make up three strata of height in the production field, regulating the temperature in the coffee plantation, it provides organic fertilizer being this the source that incorporates nutrients into coffee soil.
The pruning in the coffee plantation is carried out according to the productive structure of the plant, the effect of the activity generates new and vigorous vegetative material with high productive and quality potential.
In the 6.5 hectares of coffee cultivated are plants that do not exceed 15 years of age, obtaining in the present production cycle an average production of 1525 kg of specialty natural coffee.
In the harvest stage; the cut is selective, where cherries are obtained at their optimum ripeness, making the cut; the freshly harvested cherry is immediately taken to the drying patio and / or in the beds that end with a grain drying of 11 to 12%. The artisanal work carried out at Farm Los Cimientos guarantees excellent natural coffee quality; in it is applied the experience, love and loyalty to the production culture that for three generations has given us a way of living. To final consumer it is offered a product that guarantees quality.
