The farm San Pablo, in its eagerness to conserve the flora, fauna and thinking about the conservation of the environment, reducing water pollution, not using pesticides or fertilizers and having control of waste water from depulped, solid wastes, has the following certifications: NOP, OCIA INTERNATIONAL, BIRD FRIENDLY, JAS.
Santa Maria Huatulco is located south of the State of Oaxaca, on the Ocean Pacific Coast. In 1789 the town of Santa Maria Huatulco was officially established in its current location. It is to this Municipality that the San Pablo coffee plantation belongs to the area known as "EL BULE"; due to its exuberant vegetation and quality of land, the cultivation of coffee plantations is the main activity of this coffee area.
The farm San Pablo has an extension of 300 hectares. The production of the farm has been exclusively of coffee, where the teachings of the grandparents have been putting into practice. These practices are being passionate for coffee plantations and preserve nature since hunting is not allowed neither fishing or felling of trees.
In the farm, produces coffee Arabica in three varieties which are Bourbon, Mondo Novo and Pluma. Pluma variety is a hybrid from crossing Bourbon variety and Mondo Novo variety. The weather at the farm makes the plants mature their grains slowly so that the result of quality of the coffee is intense flavor, delicious aroma and good body in cup.
The cherry harvest is carried out in the months of November to February depending on the rains. We use groups of people that are hired from San Cristobal Amatlán and Miahuatlán de Porfirio Díaz, Oaxaca.
The workers make one or two cuts depending on the maturation. They are trained to cut only the ripe cherries. When the daily harvest day ends and the cherry is delivered, it is pulped to move to a tank where in a natural way it suffers the fermentation process and then it is washed and the honey is removed to finally pass to the sun patio to be dried in the sun for 4 or 5 days until it acquires a humidity of 12% to 13%, finally it is packed in natural fiber sacks. To later be stored in the warehouse for shipment to the customer.
