Histroy Fazenda Corrego Seco is located in the Chapada Diamantina, in the city of Piata that at an altitude of 1,268m is considered the highest city of the Brazilian North-Northeast. It is also considered the city with the lowest temperatures in that region. Temperatures vary between 2ºC and 17ºC during winter. The owner, Valmir Oliveira Santos, who has been growing coffees for over ten years, recently began to invest in quality coffees. There is great concern for the environment. Fertilization is made according to approved standards, including an annual analysis of the soil; the farm uses mainly organic fertilization.
Coffee processing system
Plenty of care is exerted to produce quality coffees, from adequately preparing the land for planting the nursery trees to processing and storage. Cherry beans are picked selectively, using large pans. Twice a day, the coffee is transported by tractors to the pulper, so that it does not ferment. Subsequently, it is taken to the terrace to dry, where it is spread out in layers of 4cm and turned 20 times a day. After the lots are dried, they are numbered and kept separated, in bins that have the environmental conditions to store coffee. Concern with quality Valmir Oliveira Santos has always invested in his properties, and during the last four years, he has been looking for new technologies to produce specialty coffees.
