Aguas Frescas Estate, Jinotega Francisco Gutierrez Administrator Samuel Talavera Zavala At the entrance of the farm we read a sign saying: Dantli El Diablo Natural Reservoir. Lets take care of the Quetzal habitat. In this reservoir is prohibited the hunting of wild life. This is a very important sign for every person that lives, works or moves in the farm Aguas Frescas. The name of the farm (fresh waters) is due to the 9 rivers that are born in this property. The manager of the farm, Samuel Talavera, has a deep and great knowledge of the rojito (red coffee cherry). He reviews the management plan of the coffee plantations that Don Francisco Gutierrez, the owner of this farm located in Jinotega, has handed over to him as a signal of trust. This place is a real natural paradise. It is a pleasure to see the roads where the coffee sacks are being transported and the fall of the streams. We are applying reforestation techniques as well as avoiding to contaminate the rivers with agricultural wastes our plan is to sow wood trees and to replant the coffee plantations 25 meters away from the rivers. Sometimes to have abundance of rivers is not such a good thing, as it is the case of this farm. We have to be very careful explains Don Samuel, who is the guard of the reservoir located in the boundaries of Aguas Frescas.
