This Bourbón coffee plantation is set at 1850 m.a.s.l. It is a very young farm, 4 years old, and this is its first harvest. This farm represents a promise in quality because its development has been premature and very productive resulting in very sweet flavored coffees, juicy acidity, floral aroma, balanced and a long and pleasant aftertaste.
This lot was meticulously picked choosing only ripe cherries, increasing the sweetness of the cup because of its high sugar concentration.
After the fully washed process, the coffee cherries were stored in our warehouse with controlled air. The parchment coffee was vibrated before being stored as well as the green coffee before being peeled.
This coffee was milled in Beneficio Don Mayo, winner of Cup of Excellence 2009 and a mill that has been in several Cup of Excellence auctions.
