The Colonel is a farm located in the mountainous region of Totutla, has humid and cloudy microclimates that allow the slow maturation of a coffee of strict height. The varieties that predominate in the area are Yellow Caturra, Garnica and Mundo Novo. They are plants of more than 5 generations adapted to the soil and the ecosystem.The lot presented was a cut made in the first days of March, a harvest center and specific selection of a mature cut.
The process used was a wash, carried out by Javier Debenardi Grajales where from the harvesting, preference was given to cherry removing floats at the same time, with this we obtained a better development of sugars in the grain. Later it was pulped and was placed in a tank for its second fermentation, this time with ice water to improve embryonic development. Finally, the coffee was washed with the help of a demucilager and dried naturally in African beds
