History of the farm
Fazenda Monte Verde is a farm that is very familiar with Cup of Excellence. In 2014 FAL Holdings purchased Fazenda Monte Verde with hopes of continuing the quality tradition. Since the purchase we have placed in CoE and increased the coffee area by an additional 40%. Our goal as a company is to produce highest quality coffee that the terroir, genetics and processing can achieve. The vision of FAL Holdings is not to change the culture and land but only to enable the staff and environment to produce a delicious coffee that everyone can be proud of. Through this we have maintained the staff from the previous owner and done our best to improve the conditions of the farm: all the houses have received basic updates, we have continued trainings for the staff, installed internet, we encourage continued education and basic skills like drivers licenses and tractor courses for the staff. When visitors come to Monte Verde they will see that they are received with open arms and treated like family. That same attention to detail is taken with coffee. And thankfully this year the international jury was able to recognize this in the cup.
Coffee processing system
On Fazenda Monte Verde we produce Pulped-Natural and Natural process coffee. During the harvest we have up to 80 pickers in the field during our three-month harvest. Every day after lunch we start to measure the cherries from each picker and bring them down to the wet mill where they are separated by ripeness. This continues often times until dark because our days are short during the winter months. First the floaters are separated and removed from the ripes and under ripes. Then the ripes are separated by a well calibrated depulper. The coffee is demusciliaged before it hits the patio for a few days before the coffee finished in a mechanical drier.
Concern about quality
Quality starts in the field but it is maintained on the patio. The staff take incredible care of the coffee through the processing. The only way to really see this is to come visit during harvest to see the dedication of the ladies that sweep the patio clean every day and make absolutely sure that coffees from different processes are not mixed.
