For the owner of Fazenda Monte Verde, José Roberto Canato, it all began after the birth of his sons Antonio and Bernardo. From this point on, José Roberto and hist wife Ligia iniciated a search for their origins and began to reflect on what they were doing to help building a better future. Their children made the couple look for their "Telos", which, according to Aristotle means joining the end with the beginning. The story starts with their great-grandfathers, who had the courage to leave Italy in the beginning of the last century and come build a new world in Brazil. Alexandre Farinazzo and Severino Canato found in coffee a beautiful challenge, first as employees and then as producers in São Paulo, and after in northern Paraná. His sons, Roberto Farinazzo and Natalino Canato continued their work bravely facing the difficulties of agriculture in Brazil, the climate of frost and two world wars. The generation of Jose Roberto's parents faced other difficulties, such as climate change, new technologies and market changes. In the other hand, José Roberto's generation, Alexandre and Severino's great-grandchildren in its majority had the oportunity to enter a university, what allowed them to expand horizons and meet new cultures. All of them have become professionals or entrepreneurs in various areas, in the case of Jose Roberto Khanate, information technology and data communication. Antonio and Bernardo led the couple to have the courage to recognize their passion for coffee and to know Fazenda Monte Verde. The biggest challenge of a coffee farm is to work always searching for the perfect coffee, however, the magic is to do that at the same time as you build a new reality, for the people who work, and mainly to the children who live in the farm. Two other small farms are a parte of Fazenda Monte Verde: Santa Bárbara and Santa Luzia.
Cafés
The coffees of Fazenda Monte Verde are located in a privileged geographical area, with beautiful scenery, great weather, natural resources and structure to produce specialty coffees. The varieties of coffees Acaiá, Yellow Bourbón, Catucai Yellow, Yellow Catuai, Icatú and Novo Mundo receive special care from planting. As a result, the farm has an average of 5,000 bags / year, of which 50% go through the process of parchment and the rest in the natural system. Coffee is harvested manually, with most selectively, favoring the grain ready for harvesting. After the harvest, the beans are pre-dried in the yards with 8,000 square meters in size and four mechanical dryers, whose objective is to obtain a dry slow and homogeneous grains. Sweetness is the predominant feature in almost all coffee produced by Fazenda Monte Verde. The Natural cafe has a predominance of acidity, sweetness and flavor, producing a fruity drink. The parchment coffee is the most balanced drink among the coffees we produce, combining the characteristics of aroma, sweetness, body and acidity. The Yellow Bourbón coffee variety has a drink with more sweetness and aroma producing a sense of perfect balance and smoothness, so the drink produced by Bourbón is the most balanced. José Roberto and family are fully aware that they gave the first step towards the perfect coffee. This is a continuous process that will never end, the perfect coffee is always going to be a search object, this is the magic and passion for coffee.
