The Farm Senhor do Bonfim is located in Chapada Diamantina, Piata Bahia. The town is considered the highest location on the Brazilians north-northeast. It is also one with the coldest weathers in the region, with temperatures varying between 35.6°F and 62.6°F during the winter.
Coffee processing system
The mature beans (cherries) are picked in baskets and twice a day; the coffee is transported by tractors to the pulping machine, so the brewing wont happen.
The pulped coffee is spread on the yard for drying, on layers about four centimeters (1.57 inches) high and turned over about twenty times a day, until it reaches the ideal moisture point. The dry grains are separated on numbered lots and stored, separately, in appropriate environment.
Quality concern
Mr. Bensoyef, coffee grower for over fifteen years, since 2004 invests on quality coffee making. This process is surrounded by cares since its beginning, with the adequate prepare of the land for planting the seedlings, until processing and storage of the grains.
Concerned with the environment, annually performs soil analysis so the fertilization is correct, using lots of organic matter.
