Filadelfo Baires, is also know by the international jury 2006 as the man who won with 3 different farms and kept turning back to receive his diplomas from Susie Spindler. He feels overwhelmed by the work done and by the quality that he is discovering. Santa Julia was bought in 1998 thanks to the earnings given by another farm who made it possible for him to acquire this farms located in the best soil possible in the Apaneca- Ilamatepec Mountain Range. He knew here he would have a higher chance of producing better quality coffee. But for him the most important thing that COE has to offer all farmers is the opportunity to learn about the quality that each one can produce. He attributes his success to the fact that he is processing his own coffee, activity which is performed at Finca Santa Elena. This is the best knowledge possible, being able to supervise the tree to cup process and learn how to do it right. He thinks both Santa Julias are special that they complement each other and now he can prove it by having both as side by side winners on this years competition. Before entering COE with this farm he picked and cupped coffee lots several times, for about three years, until acquiring the quality he hunted. He also gives credit to having ideal altitude and both Typica and Bourbón varieties mixed, but also very important was to pick coffee when the ripeness is perfect. By winning COE he will be able to invest back into the farm and his own milling facilities.
