History of the farm
The beautiful scenery of the mountains in Sul de Minas is marked by coffee fields interspersed with the Atlantic Forest. In this region, the soil is fertile and loamy, elevation reaches 1280 m.a.s.l. and the temperature varies greatly, with average highs of 28°C and lows of 11°C. It is in these conditions favorable to the cultivation of coffee that Fazenda Mantissa is located. The company’s focus has long been on producing specialty coffees. In 2014, this focus intensified. The farm only grows Coffea arabica, of the varietals Yellow Bourbon, Icatú, Acaiá, Catuaí, Catucaí, Mundo Novo, Tupi and Obatã. The property measures 156.2 ha, of which 82.8 is planted with coffee. Elevation ranges from 1100 to 1280 m.a.s.l.
Coffee processing system
The harvest is mixed, being mechanized in some areas. However, as the region is very mountainous, hand-held mechanical pickers are used and in the steepest areas, the harvest is done completely by hand. Sieves and cloths are used to protect the cherries. After the harvest, the beans proceed to the washer, pulper or centrifuge. Then they are dried on concrete patios, African beds, greenhouses or mechanical dryers. Processing is done at Fazenda Estância Fonte Alta, where the coffees are also warehoused. Twelve wooden rest boxes store the coffees in husk or in parchment. After processing, the coffees are warehoused in GrainPro and also in jute bags. The farm has its own roastery where the gourmet and specialty coffees are industrialized using cutting-edge technology.
Concern about quality
Fazenda Mantissa’s coffees present aromas of citrus and stone fruits, they have round, liquory mouthfeel and sweetness balanced by accentuated acidity. In 2015, the farm placed 5th (Naturals) and 9th (Pulped Naturals) in Cup of Excellence. The farm is certified by CertificaMinas, BSCA, UTZ and Orgânicos do Brasil.
