Coffee production station 3 hectares Predominant varieties:Typical Bourbon Garnicas and Caturras. During the selection are selected cherries of medium sized. The fermentation was done in sealed tanks with gas exit of carbon dioxide. Processing was depulped, washed and fermented during 135 hours at low temperatures. Uprising was in 28 days per batch. Its drying was in 28 days per microlots that formed the cup of excellence lot. Its size is small due to the land conditions. The coffee plantations are under shade in a Cañada. And the terrain is very rocky, with a microclimate due to the coffee is not grown here normally because fo the cold temperatures. The coffee is dried directly in the sun with shades, and the peculiarity of this Coffee is that the parchment tends to be yellow reaching orange color. It was prefermented in "zarandas" to enhace the sweetness.
