History of the farm
The story of Fazenda Progresso begins with the migration of part of the Borré family from the south to the northeast of Brazil. In 1984, seeking new business opportunities, the family acquired an 800-hectare property in the municipality of Ibicoara, Bahia, right in the center of the Chapada Diamantina region, considered one of the Brazilian ecological paradises and known for its natural exuberance and agricultural calling. In the 80s, crops such as soybeans and wheat were planted. Later, in the 90s, white potatoes were added. And to diversify the company’s activities, in 2005 it began its coffee project. The coffee fields are at an average elevation of 1150 meters. This elevation plays a key role in the quality of the beans, as the average temperature variation of 10°C, with hot days and cool nights, provides the ideal conditions for maturation and development of natural sugars. Fazenda Progresso produces, on average, 20,000 bags of coffee per year. But the expectation is that this volume will jump to 40,000 bags in 2017. Arabica coffee varieties Red Catuaí 144 and Yellow Topázio are grown. Eighty percent of the harvest is exported to more than ten countries and the rest is commercialized on the Brazilian market, mainly in Bahia. The high-altitude coffee cherries produced in Chapada Diamantina are extremely aromatic and consistent, with sweet, floral aromas standing out. They have delicate, silky bodies and a balance between acidity and natural sweetness. One finds notes of citrus fruits and of chocolate, with caramel nuances. In October 2015, the farm was one of the winners of the Cup of Excellence® Brazil coffee quality contest. With the mission of offering the Brazilian market differentiated coffees, Fazenda Progresso opened its own roastery to industrialize only its best lots from each harvest and work in the specialty coffee segment, also adding value with its continuous work with the concepts of traceability and sustainability. The property’s coffee is represented by the brand “Latitude 13 Cafés Especiais” (Latitude 13 Specialty Coffees), as allusion to its geographical location and the attributes of this terroir.
Coffee processing system
As the focus of the farm is producing pulped natural coffees, the company picks 60 to 70% of each harvest by hand. After the selective harvest, the coffee is processed in the wet method, in which the beans of different types and qualities are separates, washed, pulped and demucilated before being dried. Drying occurs in two stages. The first involves the coffees being on a concrete patio for 24 hours, exposed to sun and wind. In the second stage, the coffee is removed from the patio and conditioned in mechanical dryers. Once dry, the coffee is ready to be cupped and graded. The lots are analyzed by a cupper, who assigns quality scores to the coffee. Later the coffee is taken to rest boxes for storage, where it remains in parchment until being processed and shipped. Processing consists of removing the parchment, separating the beans by size and removing any beans with defects. All of this processing is performed with latest generation equipment.
