Salvador Sanchez is a small producer of The Zute community in the municipality of Comayagua in the department of Comayagua; his farm is called The Mineral and although relatively close to the city of Comayagua, takes 2.5 hours to get to his farm on a road through the mountains.
Like all the locals, Salvador is a working person living cultivating the land and his farm is the only asset for him and his family. With much effort, he was able to buy a plot of land where he planted coffee, produces corn and beans as well.
With the help of his two young sons, they handle their coffee farm that lies at an altitude of 1700 masl and where he has planted the variety Catuai, managing his farm in conventional way and is committed to fertilizing and maintaining healthy plants free of the pests and diseases. He is careful in gathering ripe cherries and seeks mill on the same day of harvest. It makes washing with clean water and then dry the coffee in a solar dryer.
It is the first time I participate and win COE Salvador expects to have learned enough to stay in the elite of specialty coffee production.
